# Directions:
01 - Halve the pineapple lengthwise with leaves attached. Carefully cut around the edges and scoop out the flesh, leaving a 1/2-inch thick shell to form boats. Dice the removed flesh, discarding the core.
02 - In a large bowl, mix the diced pineapple flesh, mango, watermelon, kiwi, strawberries, and blueberries until evenly blended.
03 - Whisk together lime juice and honey or agave syrup if using, then drizzle over the mixed fruit. Gently toss to coat evenly.
04 - Divide the fruit mixture evenly into the pineapple shells, filling them carefully.
05 - Sprinkle shredded coconut atop the fruit boats and embellish with fresh mint leaves.
