# Directions:
- Preheat oven to 400°F. Pierce sweet potatoes several times with a fork and place on a baking sheet. Bake for 40-50 minutes until tender when pierced with a fork.
- Heat olive oil in a large skillet over medium heat. Add onion and red bell pepper, sauté for 4 minutes until softened. Add minced garlic and cook for an additional minute.
- Add ground beef or turkey to the skillet. Break apart with a spoon and cook until browned and fully cooked, about 6-8 minutes. Drain excess fat if necessary.
- Stir in tomato sauce, tomato paste, Worcestershire sauce, brown sugar, smoked paprika, chili powder, salt, black pepper, and water. Reduce heat to low and simmer uncovered for 10-15 minutes, stirring occasionally, until thickened.
- Cut open each baked sweet potato and fluff the insides with a fork. Spoon the Sloppy Joe filling generously over each potato.
- Garnish with sliced green onions, chopped parsley, and shredded cheese if desired. Serve immediately while hot.
