# Directions:
01 - Rinse the rice under cold water. In a saucepan, bring water or chicken broth and salt to a boil. Add the rice, reduce heat to low, cover, and simmer until tender. Cook white rice for about 15 to 20 minutes, brown rice for 35 to 40 minutes. Fluff with a fork.
02 - In a mixing bowl, combine olive oil, chili powder, cumin, paprika, garlic powder, salt, and black pepper. Add chicken and toss thoroughly to coat with spice mixture.
03 - Heat a large skillet over medium-high heat. Add the seasoned chicken and cook for 5 to 6 minutes per side, until cooked through and browned. Remove from heat, let rest for 5 minutes, then slice or dice.
