# Directions:
01 - Heat olive oil in a large skillet or Dutch oven over medium heat. Add the sausage slices and cook for 5 to 7 minutes, turning occasionally, until browned. Remove with a slotted spoon and set aside.
02 - In the same pan, add diced onion, sliced carrots, and sliced celery. Sauté for 5 minutes until slightly softened.
03 - Incorporate minced garlic and cook for 1 minute until fragrant.
04 - Stir in chopped apples, then return browned sausage to the pan.
05 - Pour in broth, Dijon mustard, apple cider vinegar, dried thyme, salt, and black pepper. Stir thoroughly to combine.
06 - Bring to a gentle simmer, cover, and cook for 20 minutes, stirring occasionally until vegetables are tender and flavors have melded.
07 - Taste and adjust seasoning as necessary. Serve hot, garnished with fresh parsley if desired.
