# Directions:
01 - Preheat the oven to 425°F. Lightly grease a rimmed sheet pan measuring approximately 18 by 13 inches.
02 - Boil the elbow macaroni in salted water, cooking 2 minutes less than package recommendations. Drain and set aside.
03 - Melt 4 tablespoons of butter in a large saucepan over medium heat. Whisk in flour and cook for 1 minute until bubbling without browning.
04 - Gradually whisk in whole milk and heavy cream. Simmer, stirring constantly, until thickened, approximately 5 minutes.
05 - Add Dijon mustard, garlic powder, onion powder, smoked paprika, kosher salt, and black pepper. Stir to combine.
06 - Remove from heat and stir in shredded cheddar, Gruyère, and Parmesan cheeses until fully melted and smooth.
07 - Add drained pasta to the cheese sauce and stir until evenly coated.
08 - Transfer the mac and cheese mixture to the prepared sheet pan, spreading evenly.
09 - Cook bacon slices in a skillet over medium heat until crisp. Drain on paper towels, crumble, and set aside.
10 - In a bowl, mix panko breadcrumbs with melted butter. Stir in crumbled bacon and chopped parsley if using.
11 - Evenly sprinkle the bacon crumble mixture over the mac and cheese layer.
