# Directions:
01 - In a small bowl, whisk together eggs, milk, salt, and black pepper until fully combined.
02 - Heat a nonstick skillet over medium heat and add a small amount of butter or oil. Pour in the egg mixture and cook, stirring gently, until eggs are just set. Remove from heat.
03 - Place one tortilla flat on a cutting board. Using a knife or kitchen scissors, make a single cut from the center out to the edge, taking care not to cut completely through.
04 - Visualize the tortilla divided into four quarters. Arrange shredded cheese in the first quarter, scrambled eggs in the second, bacon and diced bell pepper in the third (if using), and chopped spinach in the fourth quarter.
05 - Starting at the cut, fold each quarter over the next sequentially to create a layered triangular pocket.
06 - Reheat the skillet with butter or oil. Place the folded quesadilla in the pan and cook 2 to 3 minutes per side, pressing gently, until golden brown and crisp.
