# Directions:
01 - Preheat the oven to 300°F and line a baking sheet with parchment paper.
02 - In a large, clean bowl, beat the egg whites and cream of tartar until soft peaks form. While mixing, gradually add sugar until stiff, glossy peaks develop.
03 - In a separate bowl, whisk together the egg yolks, cornstarch, and vanilla extract until the mixture is smooth.
04 - Gently fold the egg yolk mixture into the whipped egg whites, taking care not to deflate the batter.
05 - Divide the batter evenly into bowls for each desired color. Add a few drops of gel food coloring to each and gently fold until fully incorporated.
06 - Spoon colorful dollops onto the prepared baking sheet side by side to form a rainbow. Swirl gently for a marbled look if desired.
07 - Bake for 25 minutes until set and lightly golden.
08 - Allow to cool briefly, then remove from the baking sheet and serve immediately for optimal fluffiness.
