# Directions:

01 - Set the oven temperature to 325°F.
02 - Pat the brisket dry and rub it evenly with olive oil, kosher salt, black pepper, smoked paprika, dried thyme, and garlic powder.
03 - Heat olive oil in a large Dutch oven over medium-high heat. Sear the brisket on both sides until a deep brown crust forms, about 5 minutes per side. Remove brisket and set aside.
04 - Add sliced onions, carrots, celery, and minced garlic to the pot. Cook, stirring occasionally, until softened and fragrant, about 5 minutes.
05 - Stir in tomato paste and cook for 1 minute. Pour in beef broth, red wine, and Worcestershire sauce, scraping up any browned bits from the bottom. Bring liquid to a simmer.
06 - Return the brisket to the pot, placing it fat side up. Spoon vegetables and braising liquid over the top. Cover tightly and transfer to the preheated oven. Braise for 3 to 3.5 hours until fork-tender.
07 - While brisket cooks, boil peeled and cubed sweet potatoes in salted water until very tender, about 15 to 20 minutes. Drain thoroughly.
08 - Combine sweet potatoes with butter, heavy cream, salt, and black pepper. Mash until smooth and creamy.
09 - Remove brisket from oven and let it rest for 10 to 15 minutes before slicing against the grain into serving portions.
10 - Plate sliced brisket with sautéed vegetables and braising sauce, accompanied by mashed sweet potatoes.
