→ Garlic Toast
17 - 6 slices rustic bread or baguette
18 - 3 tbsp unsalted butter, softened
19 - 2 garlic cloves, minced
20 - 1 tbsp fresh parsley, chopped
21 - Pinch of salt
# Directions:
01 - Heat olive oil in a large pot over medium heat. Add ground beef and cook, breaking apart, until browned, about 5 to 6 minutes. Drain excess fat if necessary.
02 - Add diced onion and minced garlic to the pot. Cook for 2 to 3 minutes until fragrant.
03 - Stir in chopped cabbage, sliced carrots, and diced bell pepper. Cook for 4 to 5 minutes until slightly softened.
04 - Incorporate diced tomatoes, beef broth, tomato sauce, dried oregano, dried thyme, and bay leaf. Bring mixture to a simmer.
05 - Stir in uncooked white rice. Season with salt and black pepper to taste. Cover and simmer for 25 to 30 minutes until rice and vegetables are tender.
06 - While soup simmers, preheat oven broiler. Combine softened butter, minced garlic, chopped parsley, and a pinch of salt.
07 - Spread garlic butter mixture evenly across bread slices. Arrange on a baking sheet and broil for 2 to 3 minutes until golden and crispy.
08 - Remove bay leaf from soup. Ladle soup into bowls, garnish with chopped fresh parsley, and serve alongside garlic toast.
