01 - 1 lb ground beef (can substitute ground turkey)
02 - 1/3 cup breadcrumbs
03 - 1 large egg
04 - 2 tbsp milk
05 - 1/4 cup finely chopped onion
06 - 1 clove garlic, minced
07 - 1 tsp salt
08 - 1/2 tsp black pepper
09 - 1 tsp smoked paprika
10 - 1/4 cup grated apple, peeled and cored
→ BBQ Sauce
11 - 3/4 cup BBQ sauce (preferred brand)
12 - 1/4 cup unsweetened applesauce
13 - 2 tbsp apple cider vinegar

14 - 2 medium apples, cored and sliced
15 - 1 red onion, cut into wedges
16 - 1 red bell pepper, sliced
17 - 1 tbsp olive oil
18 - 1/2 tsp salt
19 - 1/4 tsp black pepper
# Directions:
01 - Preheat oven to 425°F. Line a large sheet pan with parchment paper for easy cleanup.
02 - Combine ground beef, breadcrumbs, egg, milk, onion, garlic, salt, pepper, smoked paprika, and grated apple in a large bowl. Mix gently until just combined.
03 - Shape mixture into 1-inch meatballs, approximately 18 pieces. Arrange meatballs on one half of the prepared sheet pan.
04 - Whisk together BBQ sauce, applesauce, and apple cider vinegar in a small bowl. Reserve 1/4 cup for serving and brush the remainder over meatballs.
05 - In another bowl, combine apple slices, red onion, and bell pepper with olive oil, salt, and pepper. Spread this mixture evenly on the other half of the sheet pan.
06 - Bake in the preheated oven for 20 to 25 minutes until meatballs are cooked through and apples are tender. Turn vegetables once halfway through cooking.
07 - Drizzle reserved BBQ sauce over meatballs before serving. Optionally garnish with fresh herbs. Serve warm.
